Today the Aix market was adorned with these wonderful juicy fruits in colourful heaps, shining in the winter sun. Perfect for making a Clementine Cake.
You start by boiling a few of them for two hours which makes the kitchen smell marvellously citrusy. The other main ingredient is almonds – no flour – resulting in a very moist cake. Works as cake, or as a dessert with crème fraiche.
