There was a large family party at the weekend and my job was producing lots of salads. Here are some of them…
- Different types of tomatoes with fresh herbs
- Pea shoots, sprouted mung beans, leaves and pomegranate seeds
- Moroccan salad of carrots, oranges, sultanas with cumin
Then there was a dish of Miniature potatoes with a pesto, crème fraiche and lemon dressing, or a Mexican bean salad with red peppers and a spicy chipotle dressing.
But none of these was the favourite! The clear crowd pleaser was:
Winter Caprese which is in the middle of the table. It disappeared very quickly, most liking the unusual rocket dressing. It’s a version of the summer Insalata Caprese, but using winter ingredients, apparently very rich in vitamins C E and K to boost the body’s defences. Well that’s what the recipe says – we liked it because it tasted so good!

Ingredients
- 90g rocket
- ½ clove garlic
- 2 balls fresh vegetarian mozzarella, drained and sliced
- salt and pepper
- 4 tbsp olive oil
- 4 kiwi fruit, peeled and sliced
- 2 large avocados, peeled and sliced
- coarsely ground chilli

Method
Stage 1
Reserving a few rocket leaves for decoration, blend the rest with the olive oil and garlic to make a vivid green dressing.
Stage 2
Arrange the kiwi, mozzarella and avocado slices on a platter. Drizzle over the rocket dressing. Sprinkle with salt and pepper, and scatter with some chilli to taste and the reserved rocket leaves. Serve.
